  • 6 tablespoons salted butter (melted)
  • 4 ounces bittersweet chocolate (chopped)
  • 3 tablespoons salted butter (melted)
  • 3 tablespoons vegetable oil
  • 2 tablespoons unsweetened cocoa powder
  • 2/3 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 8 Oreo cookies, chopped
  • 2 tablespoons powdered sugar
  • 1 tablespoon dutch-processed cocoa powder
  • Pinch of salt
  • 2 tablespoons salted butter (melted)
  • 6 ounces milk chocolate (chopped)
  • 1 cup cold heavy cream
  • 2 tablespoons dutch-processed cocoa powder
  • 2 tablespoons powdered sugar
  • Pinch of salt
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder

Instructions

  1. Mix 25 crushed Oreos with 6 tablespoons melted butter and press into a 9-inch pie pan to form a crust. Chill.
  2. Melt 4 ounces bittersweet chocolate with 3 tablespoons melted butter and 3 tablespoons vegetable oil. Stir in cocoa powder and brown sugar. Beat in eggs, vanilla, and salt. Fold in flour. Pour into the crust and bake until set. Cool.
  3. Chop 8 Oreo cookies and mix with powdered sugar, dutch-processed cocoa powder, salt, and melted butter. Spread over the cooled brownie layer.
  4. Melt 6 ounces milk chocolate and let cool. Whip 1 cup heavy cream until soft peaks form, then fold in melted chocolate. Spread mousse over cookie topping, chill until firm.
  5. Whip 1 cup heavy cream with granulated sugar and unsweetened cocoa powder to soft peaks. Pipe or spread on top of the chilled pie before serving.

Notes

For clean slices, use a sharp knife warmed in hot water. Chill each layer before adding the next. Adjust sugar based on chocolate quality.
