  • Total Time: 255 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • Fresh parsley, chopped for garnish

Instructions

  1. Place chicken breasts in a large bowl; drizzle with olive oil and season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub to coat.
  2. In a skillet over medium heat, brown the chicken on both sides for 2-3 minutes.
  3. Transfer chicken to the bottom of the slow cooker.
  4. Add bell pepper, onion, and garlic on top of chicken.
  5. Pour in diced tomatoes and chicken broth.
  6. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is cooked through.
  7. Remove chicken, shred it, and return to the pot.
  8. Stir in heavy cream and Parmesan until melted and creamy.
  9. Cook pasta according to package instructions; drain and add to the slow cooker.
  10. Heat everything together for another 15-20 minutes on low.
  11. Serve hot, garnished with fresh parsley.

Notes

To make it lighter, use reduced-fat cream or skip heavy cream and add more broth. You can use shrimp or sausage instead of chicken.
